As a young girl who grew up in Africa, I grew up eating real food. We cooked all of our meals and rarely store food in the freezer due to irregularities in power. We prepare our meals with the intent of no leftovers. But when I came to America, things changed. I was introduced to the world of fast-delicious-food, and the fact that I was a poor international student made the dollar menu even more enticing. This then translated into my work life when I became a career woman. When I first started working, I just didnt feel like cooking at all. I was so tired and I would buy some restaurant food on the way home for my family. And then I started reading so many food blogs. And I got inspired to cook. Some of the blogs that inspired me include Kath Eats Real Food, The Pioneer Woman Cooks, Annie Eats, Tartellete and so many other food blogs that I cannot even remember. The thought of them eating such home-made nutritious food while I feed myself and my family MSG-ladden junk food shook me. So, I vowed to work harder to change things. I have been cooking our meals now for a long time. I started small and then I became confident. I even discovered that I love to have friends over and that I love to entertain.
I want the world to know that cooking is easy. Last night my daughter and I got home at 7:30pm and by 7:50pm dinner was ready. And I am not talking cereal. I am talking grilled steak, grilled potatoes and some premium romaine salad paired with corn. I learned to cook fast.
